During Ramadan we love to stock up on beautiful Medjool dates, especially those from Jericho. Naturally sweet and rich in flavour, dates are perfect on their own, but even more delicious when filled.
These pistachio cream stuffed dates are one of our favourite easy Ramadan dessert ideas. They’re simple to prepare, look beautiful on the table, and feel indulgent without being overly heavy, perfect for iftar gatherings or Eid hosting.

The combination of creamy pistachio filling, crunchy chopped nuts and a touch of sea salt creates the perfect balance of sweetness and texture.
Ingredients

250g Medjool dates (we use Jericho Medjool Dates)

150g pistachios
-
150g pistachio cream
-
A pinch of sea salt
Method

Dry fry the pistachios in a pan with a small pinch of sea salt. Allow them to cool, then roughly chop.

Slice each date down the centre and gently remove the stone.

Fill each date with approximately one teaspoon of pistachio cream.

Lightly press the date closed so a little filling remains visible, then gently press the exposed cream into the chopped pistachios.
